Jan 30 & still no snow!

This has been a remarkable winter so far in St. Louis.  Today’s high will approach 65 and the same for tomorrow, incredible!  We’ve only had one winter weather situation and that only resulted in about 1.5 inches of snow and had it not been for the Highway Department decision to just not treat/salt roads, it would have been a non-event.  Unfortunately, they looked to save some money, didn’t send out the trucks and it made for gridlock over the entire area for about four hours.

Other than that, we’ve made it through winter unscathed and I hope it continues!  This week, every day is predicted to be above 50 with the possibility of winter-like weather over the weekend, but we’ll see.  If it’s the weekend, then it’s fine.

We had a great dinner last night, Mexican Salsa Roast Beef!  We got a 4lb arm roast, rubbed it down with chili powder and simmered it for about 3 hours with a jar of salsa.  Threw in some red potatoes late in the process and then thickened the produced sauce for an amazing taste experience with some very tender roast beast!  Enjoyed by all which is a happening with the finicky eaters we have in the family.

Still hitting Insanity every morning and keeping the weight to a normal level.  Although I’d like to be about 3-4 lbs lighter, I also want to enjoy eating some good stuff every so often, so I’m not militaristic about my discipline.  Had handfuls of some awesome ginger snap cookies this weekend.

Key West Lou isn’t helping my discipline much lately.  He’s had a house guest, Anna from Italy, and between her and Lou’s daughter, his descriptions of various lunches and dinners makes a guy’s stomach growl!  Reading his blog in the morning as I do, it makes for a long day from a hunger point of view.  Hey, be sure to catch Key West Lou and his Legal Hour this Friday morning online at http://www.konkbroadcasting.com/ and you’ll be like me and have tons of interesting information to bring up with your significant other.

The job is still going well, the client loves what I do, so I’m in a pretty good place.  Will keep the momentum going and will continue to fight the good fight.
